Authentic Turkish Ice Cream, Naturally Sweet
This Turkish-style ice cream delivers the classic stretchy texture and rich pistachio flavor without extra sweeteners. Alkis Pistachio Cream (35% pistachio) create a perfectly balanced dessert — creamy, aromatic, and full of real nut flavor.
Ingredients
- 1 liter whole milk
- 1 tsp pure salep powder (or cornstarch alternative)
- 150–180 g Alkış Pistachio Cream (35% pistachio)
- 60–80 g finely ground pistachios
- 100 ml heavy cream or coconut cream
- 100 g whole pistachios (for garnish and texture)
Method

Heat the Milk - In a saucepan, bring milk to a gentle boil while stirring.
Simmer for 6–8 minutes to reduce water content and intensify flavor. - Add Salep - Lower the heat. Gradually whisk in salep until it dissolves completely and the mixture thickens slightly.
- Blend with Pistachio Cream - Remove from heat. Add Alkış Pistachio Cream, ground pistachios, and cream. Blend for 1 minute until the texture becomes silky and uniform.
- Freeze and Blend - Transfer to a container and freeze. Every 2 hours, remove and blend for about 30–60 seconds to keep the texture smooth and elastic. Repeat this 3–4 times for the traditional Turkish consistency.
- Finish - Add whole pistachios during the last blending, smooth the surface, and freeze for at least 6 hours before serving.
Serve & Enjoy
Let it rest at room temperature for 5 minutes before scooping. Creamy, light, and full of real pistachio character — a natural twist on the iconic Turkish ice cream experience.
